Quench the summer heat with these cool and refreshing snacks! Brighten up your summer with these unique treats.

Mini Fruit Pizza

A sugar cookie topped with frosting and fruits, this delicious snack takes advantage of summer’s various ripe fruits. This recipe makes 24 cookies.

Cookie Ingredients:

▢ 2 3/4 cups all-purpose flour

▢ 1 tsp baking soda

▢ 1/2 tsp baking powder

▢ 1 cup unsalted butter softened

▢ 1 1/2 cups sugar

▢ 1 egg

▢ 2 tsp vanilla extract

Frosting Ingredients:

▢ 16 oz cream cheese

▢ 1/2 cup butter softened

▢ 2 tsp vanilla extract

▢ 3 cups powdered sugar

▢ sliced fruitsInstructions:

1. Preheat the oven to 375 degrees. Combine flour, baking soda and baking powder.

2. In a separate large bowl, mix butter and sugar together using an electric mixer until fluffy. Then, beat in eggs and vanilla extract.

3. While mixing, slowly add the dry ingredients to the butter mixture until well combined.

4. Roll the dough into 1.5 inch balls and place them evenly on parchment paper.

5. Bake the cookies in the oven for 8-9 minutes or until the edges turn golden brown. Take off the pan and let them cool.

6. Blend together cream cheese and butter using an electric mixer. Then, add vanilla extract. Pour in powdered sugar to taste.

7. Spread the frosting over the cooled cookies and add sliced fruit on top.

Mocktails

Sparkling water adds a special pop to any fruit juice. Here’s a few of our favorite combinations.

Mojito Ingredients:

▢ 1/2 cup fresh mint

▢ 1/2 cup water

▢ 1/2 cup sugar

▢ 1 cup of unflavored carbonated water

▢ 1/2 lime

▢ Ice cubes

Instructions:

1. Heat the water and sugar in a pot until all the sugar dissolves.

2. Turn off the heat, then steep mint in the syrup for 15 minutes.

3. Squeeze lime into carbonated water and add mint syrup to taste. Add ice cubes for a more cooling drink.

Tropical Mocktail Ingredients:

▢ 1/2 cup strawberry guava juice

▢ 1/4 cup orange juice

▢ 1/2 cup carbonated water

▢ Ice cubes

Instructions:

1. Chill all ingredients and combine in a cup.

2. Stir and add ice cubes for a more refreshing drink.
